Garden Fresh Pasta Salad
Serves: 14 Serving Size: ¾ cup
Ingredients:
- 1 pkg (16 oz) bow tie pasta, uncooked
- 2 cups broccoli florets
- 1 small red onion, thinly sliced
- 1 medium red bell pepper, chopped
- 1 cup halved grape tomatoes
- ½ cup 100% parmesan cheese
- 1 bottle (8 oz) sun-dried tomato vinaigrette dressing
Instructions:
Cook pasta as directed on package, adding the broccoli to the pasta cooking water for the last minute of the pasta cooking time. Drain; rinse under cold water. Drain well. Place pasta mixture in a large bowl. Add remaining vegetables; mix lightly. Stir in cheese. Add dressing; toss to coat. Cover.
Refrigerate at least 1 hour or until ready to serve.

Barbeque Chicken
Serves: 6 Serving Size: 1 Breast
Ingredients:
- 6, 4.5 oz. boneless, skinless chicken messages
- ½ cup onions, sliced
Sauce:
- ¼ cup vinegar
- 1 Tbsp. Worcestershire sauce
- ¼ cup tomato paste
- ¼ cup brown sugar
- Black pepper to taste
- 1 tsp. hot pepper flakes
- 1 tbsp. chili powder
- 1 cup chicken broth
Instructions:
Place chicken and onions in casserole dish sprayed with vegetable oil. Mix sauce and pour over chicken. Bake 20 minutes at 350 degrees F. Baste occasionally.

Watermelon Blueberry Banana Split
Servings: 4 Serving Size: 1 split
Ingredients:
- 2 large bananas
- 8 scoops of watermelon or cantaloupe
- 1 cup blueberries, raspberries or strawberries
- ½ cup low-fat vanilla yogurt
- 1/3 cup granola
Instructions:
Peel bananas and cut in half crosswise. Then cut each half lengthwise. Lay 2 banana pieces against the sides of a shallow dish. To make watermelon scoops, use an ice cream scoop to create balls. Remove seeds if needed and place a watermelon scoop at each end of the dish. Fill the center with berries. Stir yogurt until smooth and pour over the berries and watermelon. Sprinkle with granola.
